As a Safe Quality Food certified company, we prefer ladybugs and other friendly critters. Watermelon Salad Enjoy this fresh salad alone or with BBQ classics like steak or kabobs Makes 8 side dish servings or 4 entrée servings Ingredients 1 pkg Campari tomatoes, cut into wedges 1 pkg Y.E.L.O. tomatoes, cut into wedges 1/4 cup extra virgin olive oil 2 tbsp honey 1 tbsp finely grated lemon zest 1 tbsp lemon juice 1/2 tsp salt 4 cups chopped watermelon 1/3 cup very thinly sliced red onion 2 tbsp very thinly sliced fresh mint 1/2 cup crumbled goat cheese Directions Whisk oil with honey, lemon zest, lemon juice and salt. Toss tomatoes with watermelon, olives, red onion and dressing. Transfer to a serving platter. Sprinkle with mint and crumbled goat cheese.
