Wisconsin cheese maker Belgioioso produces some of the best fresh mozzarella available. In 1979, Belgioioso president Errico Auricchio moved his family from Italy to the United States with a dream of crafting Italian-style cheeses for an American audience. He settled in Wisconsin, """"America's Dairy land"""" because of the availability of superior, grass-fed milk. BelGioioso's burrata is made from fresh, local, rBST-free milk gathered a few hours after milking. The cheese is pulled and stretched into a mozzarella-like ball with a smooth, porcelain white finish and delicate, milky flavor. Then, the ""pouch"" is filled with a rich straciatella, a special fillin of cream and bits of mozzarella, plus a seasoning of Black Summer Truffles. The resulting cheese is the greatest mozzarella you've ever had, bursting with a savory cream interior laced with truffle. Belgioioso burrata is made with vegetarian rennet and is always gluten-free.
