Select the Farm We have traveled all over the world and work directly with farms all over the world, but choose to work with only those with organic farming practices. We have been to Central America, South America, Indonesia and Africa in search of the best farms in the world to buy from. Import Clean Beans Once we have found a farm, we ensure that all beans they provide us are wet washed. Wet Washed beans are beans that have been picked right from the coffee tree, immediately rinsed with clean water, de-pulped and soaked overnight. The resulting bean is almost free of contaminants. Air Roasted Once the beans arrive to our Roastery, we use an air roaster to remove the chaff and additional contaminants, removing more of the “harsh, bitter” taste found in coffees traditionally roasted. Air roasting eliminates the carbonization and smoke that normally burns and leaves deposits on all other beans.
