On one side of a press is a beveled edge for cutting rounds from rolled-out dough. Turn the press over, place the dough round on the sealing "teeth," and pat it into the concave form. Spoon filling into the center, moisten the edges of the round for a proper seal, fold the press, and--bingo!--out comes a uniformly crimped pastry ready for steaming, frying, or baking.
